Cosmic Brownies are scrumptious, fudgy brownies topped with delicious fudge icing and a sprinkling of rainbow-colored sprinkles. Just like the kind you buy at the store, this copycat recipe creates amazing brownies with a rich fudgy texture right from the comfort of your home.

Cosmic Brownies Ingredients

You will need:

Brownies

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, softened
  • 2 eggs
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ⅓ cup cocoa powder
  • ¼ teaspoon salt
  • 2 tablespoons milk

Frosting

  • ⅓ cup heavy cream
  • ½ cup semi-sweet chocolate, chopped
  • ½ cup milk chocolate, chopped
  • ½ teaspoon vanilla extract
  • 1 tablespoon butter, cut into 4 pieces
  • ¼ cup rainbow chip sprinkles

Substitutions and Additions

NUTS: While my kiddos tend to prefer the classic rainbow sprinkles, I prefer to put nuts on my Cosmic Brownies. I love to add crushed walnuts or pecans to half the batch so that we can all enjoy our brownies just the way we like them! 

How to Make Cosmic Brownies

STEP ONE: Preheat the oven to 350°F. Line a 9×9-inch square pan with a piece of parchment paper, leaving an overhang on both sides. Coat the pan with cooking spray.

PRO TIP: Lining the pan with parchment paper will allow you to lift the entire square of baked brownies out of the pan for easier cutting once cooled. 

STEP TWO: Add the sugar and butter to a large mixing bowl and use a hand mixer to beat together until light and fluffy, about 1 minute.

STEP THREE: Add the eggs and vanilla to the bowl. Then beat for another 2 to 3 minutes until the mixture is pale yellow and thick.

STEP FOUR: Add the flour, cocoa powder, and salt. Mix on low speed until ingredients are just incorporated. Pour in the milk and beat until smooth.

STEP FIVE: Pour the batter into the prepared pan, and spread it into an even layer.

STEP SIX: Bake for 20 to 25 minutes until a toothpick inserted into the center of the pan comes out clean or with just a few crumbs attached to it.

PRO TIP: Oven temperatures vary and may need to be recalibrated periodically to ensure they are accurate. Make sure to check your brownies at the lower end of the recommended baking time.

STEP SEVEN: Let the brownies cool.

STEP EIGHT: Place the heavy cream in a medium bowl. Microwave in 20-second increments until the cream is very hot but not boiling.

STEP NINE: Add the chopped chocolates to the cream. Let sit for a minute, then stir until a smooth chocolate mixture forms. Stir in the butter and vanilla extract until melted.

STEP TEN: Pour the chocolate over the top of the brownies. Use a spatula to spread the chocolate into an even layer. Add the sprinkles on top of the chocolate.

PRO TIP: Some cosmic brownies can have nuts. Simply swap the nuts out for the sprinkles.

STEP ELEVEN: Chill the brownies until they set, about 2 hours to overnight. Use the parchment to lift the brownies out of the pan.

STEP TWELVE: Cut into squares and serve. 

How to Serve Cosmic Brownies

These thick, fudgy homemade cosmic brownies will delight your kiddos when they show up in their lunch box. They would also make a fantastic after-school treat. You could also use them to make an extra special treat for dessert by topping them with a big scoop of ice cream and whipped cream.

Storage

IN THE FRIDGE: You can store your cut brownies in an airtight container on the counter at room temperature, or in the fridge. They are best if eaten within 2 to 3 days. 

IN THE FREEZER: If you prefer to freeze this classic chocolate treat, let them cool completely, then simply wrap them tightly in plastic wrap and then in aluminum foil. Place them in the freezer for up to 3 months.
