Chocolate haystacks are delightfully chocolatey no-bake cookies with a satisfying crunch. This old-school treat is incredibly easy to make with just three ingredients. Always a huge hit, you can whip up a batch of chocolate haystacks in just 30 minutes.

Chocolate Haystacks Ingredients

You will need:

  • 1 cup milk chocolate chips
  • 1 cup butterscotch chips
  • 5 ounces chow mein noodles

PRO TIP: This recipe makes 12 haystacks and uses a whole single container of chow mein noodles. You can easily double or triple the recipe.

Substitutions and Additions

PRETZELS: You could substitute pretzels for the chow mein noodles for this easy treat.

PEANUTS: Add extra salty crunch with salted peanuts mixed with the noodles.

CHOCOLATE: Substitute peanut butter chips or milk chocolate, dark chocolate, or semisweet chocolate chips for the butterscotch chips. You could even turn these into white chocolate haystacks with white chocolate chips.

SEA SALT: Add a dash of sea salt to the chocolate mixture for a gourmet spin on these treats.

How to Make Chocolate Haystacks

STEP ONE: Place the chocolate chips and butterscotch chips in a medium microwave-safe bowl.

STEP TWO: Heat in 30-second increments, stirring between each, until chips are mostly melted.

PRO TIP: Don’t heat for more than a 30-second interval at a time and stir well between each heating so that your chocolate and your butterscotch chips don’t scorch (if they scorch, they solidify and clump together, and there’s no saving them, you’ll have to start over).

STEP THREE: Stir in a full container of chow mein noodles. Stir gently until all the noodles are fully coated in the chocolate mixture.

PRO TIP: Some of the chow mein noodles tend to be really long. Stir gently because the noodles will break apart, but it’s okay if they break a little bit so that they don’t stick out every which way when you spoon them out.

PRO TIP: If the haystack mixture gets too hard to work with, microwave for 15-30 seconds and re-stir.

STEP FOUR: Use two spoons to scoop small piles of the “haystack” mixture onto a sheet of parchment paper.

PRO TIP: Make sure to use parchment paper or wax paper when spooning out the haystacks. They’ll lift easily off of the paper. You can place the paper on a baking sheet for ease, moving the haystacks around while they are setting (like if you wanted to pop them in the fridge or freezer to firm up more quickly.)

STEP FIVE: Allow the haystacks to set and solidify before serving.

PRO TIP: If you want more of a wet look to the haystacks, crunch down the chow mein noodles into smaller pieces.

How to Serve Chocolate Haystacks

Enjoy these tasty chocolate butterscotch haystacks with a cold glass of milk or a warm cup of rich whipped hot chocolate for the perfect treat. These chocolate chow mien clusters are a popular addition to any potluck table and are perfect for holiday gifting. You can put them in a festive cookie tin or a food-safe bag and tie them with a ribbon.

Storage

IN THE FRIDGE: Keep leftover no-bake chocolate haystack cookies in a cool location (or in the fridge or freezer). They will stay good for up to 2 weeks in the refrigerator.

IN THE FREEZER: Store these chow mein noodle cookies for up to 3 months in the freezer in an airtight container. These sweet treats taste extra yummy chilled as well.

Chocolate haystacks are easy to make with no baking required. Rich chocolate and butterscotch chips coat crunchy chow mein noodles to create lip-smacking confections that will disappear before your eyes. So simple to make you won’t be able to resist whipping up a batch for any occasion.
