- 2 cups butter
- 2 cups white sugar
- 2 cups brown sugar
- 4 eggs
- 2 teaspoons vanilla
- 4 cups all-purpose flour
- 5 cups oatmeal flour *see note*
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- 24 ounces chocolate chips
- 8 ounces milk chocolate bar grated
Preheat oven to 375°F
Line a baking sheet with parchment paper or silicone mat.
Cream butter, white sugar, and brown sugar until smooth, about 2 minutes.
Add eggs and vanilla; mix until incorporated.
In a second bowl, combine flour, ground oatmeal, salt, baking powder, and baking soda. Add to wet mixture.
Add chocolate chips and grated chocolate.
Roll into one tablespoon balls and place two inches apart on cookie sheets.
Bake for 8 to 10 minutes until just lightly golden brown. Cool on cooling racks.
To make oatmeal flour, place the old-fashioned oats in a food processor and blend until ground into a fine powder.
Use a medium cookie scoop to make your dough balls nice and even.
These cookies will continue to bake just a bit when you take them out of the oven. It’s a good idea to take them out when they look just a bit undercooked to how you like them.
