  • 2 teaspoons vanilla
  • 4 cups all-purpose flour
  • 5 cups oatmeal flour *see note*

  • 1 teaspoon salt
  • 24 ounces chocolate chips
  • 8 ounces milk chocolate bar grated

Instructions

  • Preheat oven to 375°F
  • Line a baking sheet with parchment paper or silicone mat.
  • Cream butter, white sugar, and brown sugar until smooth, about 2 minutes.
  • Add eggs and vanilla; mix until incorporated.
  • In a second bowl, combine flour, ground oatmeal, salt, baking powder, and baking soda. Add to wet mixture.
  • Add chocolate chips and grated chocolate.
  • Roll into one tablespoon balls and place two inches apart on cookie sheets.
  • Bake for 8 to 10 minutes until just lightly golden brown. Cool on cooling racks.

Notes

To make oatmeal flour, place the old-fashioned oats in a food processor and blend until ground into a fine powder.
Use a medium cookie scoop to make your dough balls nice and even.
These cookies will continue to bake just a bit when you take them out of the oven. It’s a good idea to take them out when they look just a bit undercooked to how you like them.
