Chocolate Haystacks

Chocolate haystacks feature rich chocolate and butterscotch chips coating crunchy chow mein noodles to create a no-bake cookie with a satisfying crunch.

Ingredients
  

  • 1 cup milk chocolate chips
  • 1 cup butterscotch chips
  • 5 ounces chow mein noodles

Instructions
 

  • Place the chocolate chips and butterscotch chips in a medium microwave-safe bowl.
  • Heat in 30-second increments, stirring between each, until chips are mostly melted.
  • Stir in a full container of chow mein noodles. Stir gently until all the noodles are fully coated in the chocolate mixture.
  • Use two spoons to scoop small piles of the “haystack” mixture onto a sheet of parchment paper.
  • Allow the haystacks to set and solidify before serving.

Notes

PRO TIP: This recipe makes 12 haystacks and uses a whole single container of chow mein noodles. You can easily double or triple the recipe.
PRO TIP: Don’t heat for more than a 30-second interval at a time and stir well between each heating so that your chocolate and your butterscotch chips don’t scorch (if they scorch, they solidify and clump together, and there’s no saving them, you’ll have to start over).
PRO TIP: Some of the chow mein noodles tend to be really long. Stir gently because the noodles will break apart, but it’s okay if they break a little bit so that they don’t stick out every which way when you spoon them out.
PRO TIP: If the haystack mixture gets too hard to work with, microwave for 15-30 seconds and re-stir.
PRO TIP: Make sure to use parchment paper or wax paper when spooning out the haystacks. They’ll lift easily off of the paper. You can place the paper on a baking sheet for ease, moving the haystacks around while they are setting (like if you wanted to pop them in the fridge or freezer to firm up more quickly.)
PRO TIP: If you want more of a wet look to the haystacks, crunch down the chow mein noodles into smaller pieces.
